Beginning July 1, Aramark has been the contract manager for the University of Kentucky food services, doing business as UK Dining. UK Dining has embraced the contract provision to buy more than $1.8 million of Kentucky Proud and local food products in its first year, with plans for growth each year. This is a challenging goal for UK Dining and a great opportunity for local farmers and food processors. But it will also be a challenge for the local food industry to meet the quality and business requirements of UK Dining.
