Eastern Kentucky Farm to Table is connecting the dots of the local food system between restaurants, institutions, and direct consumers to producers and processors. The goals of the program are to map the resources available, build demand and production capacity, and serve as a local food champion.
Eastern Kentucky Food System Collaborative
The EKYFSC is a network of farmers, gardeners, producers, consumers, health professionals, educators, extension agents and more who are dedicated to building, strengthening and connecting the Eastern Kentucky food economy. This network aims to support the regional food system through information sharing, promoting education, advocating for policy change and building markets for Eastern Kentucky products.
Pasture Poultry Project
Carrying out the Farm to Table mission, we are building capacity by funding a pasture poultry pilot project in Floyd County that will produce 1000 broilers for use in local school systems during National Farm to School Month. This project will create an infrastructure to continue small scale poultry production in the mountains.
“Face to Food” Local Food Crawls
Our local food crawls were developed by the workgroups of the collaborative in an effort to bring awareness of the availability of fresh local foods and to entice locally owned restaurants to buy local.
Our first event included 3 local stops, 39 participants, 4 producer/owner speakers, and an unforgettable evening dedicated to celebrating everything local.
